
Last week's Thursday cooking night was enchiladas with black bean filling and mole (mol-ay) sauce. Did you know that there's chocolate in mole sauce? It's pretty interesting. Chocolate and tomatoes... who would have thought? This week we were under a time crunch (I had about 40 minutes before going to see Coco Before Chanel with Hayley). We quickly juggled two pans of olive oil and garlic while trying to cut the onion fast enough for both pans. We seeded and diced a jalapeno pepper and Marie squashed the black beans with a fork to finish the filling. While she was squishing, I was mixing all the spices into the sauce.
Quick side story: At the grocery store we went to the spice aisle looking for chili powder. We walk into the aisle and there's a rather large man in a wheelchair staring at all the spices. As we were leaving the aisle Marie mentioned that it smelt really bad and she wasn't sure if it had been the spices or the man.
At this point in cooking, I threw in some spices and Marie looks up at me and says "Whatever you put in there just smelt like B.O. I'm guessing it wasn't the man after all." It was great!
We also had chips and salsa (Marie's mom's homemade salsa with cucumbers). Ole!
